Texas Caviar

1 can Blackeyed peas
1 can Shoepeg corn
1 can white Hominy (drained)
2-3 Jalapeno Peppers chopped finely
1 small Bell Pepper chopped finely
1 small white Onion chopped finely
1 can Rotel Tomatoes
1 clove garlic chopped (may use garlic powder)
1 bottle of Italian Dressing

Marinate at least 4 hours.......drain and serve with scoop chips.

 7 Layer Fiesta Dip

1 (16oz) can refried beans.
1 (16 oz) container Sour Cream
1  pkg. Taco Seasoning
2 cups shredded Cheddar cheese
1 tomato, chopped (about 1 cup)
1/2 cup sliced green onions
1 cup guacamole
1/2 cup sliced black olives
Tortilla chips

Spread refried beans in a shallow serving dish, (pizza pan works well) Mix sour cream with taco seasoning; spread over beans.  Top with cheese, tomato, onion,dollops of guacamole and olives.  Serve with tortilla chips.

Taco Dip

1 pkg cream cheese, softened
1 cup sour cream
3/4 cup mayo
1 lb ground chuck
1 envelope taco seasoning
1 8 ox can tomato sauce
2 cups shredded cheddar or taco cheese
4 cups shredded lettuce
2 medium tomatoes, diced
1 small onion, diced
1 medium green pepper, diced
Tortilla chips

In a small mixing bowl, beat the cream cheese, sour cream, and mayo until smooth.  spread on a 12-14 inch pizza pan or serving dish.  Refrigerate for 1 hour.  In a sauce pan over medium heat, brown beef; drain.  Add taco seasoning and tomato sauce; cook and stir for t 5 minutes.  Cool completely.  Spread over cream cheese layer.  Refrigerate.  Just before serving sprinkle with cheese, lettuce, tomato, onion and green pepper.  Serve with chips.

Chip Dip

2-8 oz pkg. cream cheese
1-2 1/2 oz jar chipped dried beef, finely chopped
1 small onion, grated
1 can cream of mushroom soup
1/4 cup Ketchup

In a bowl, soften cream cheese.  If desired blanch beef to lessen saltiness.  Add to cheese along with remaining ingredients.  blend well. Chill. Serve with chips.

Cheese Dip

2-8 oz pkg. cream cheese softened
2 Tbls green onions chopped fine
1 small pkg Luncheon Ham cubed
Sprinkle with Accent to taste

Broccoli Dip

1 pkg. frozen chopped broccoli, cooked and drained
1 can cream of musroom soup
1 roll Kraft garlic cheese, diced
1 can water chestnuts, drained and finely chopped.

In large microwaveable bow., melt cheese in mushroom soup; add broccoli and water chestnuts,  Stir well.  Serve hot with Doritos, crackers, or rye bread, chunked.

Neiman Marcus Dip

4 cups Cheddar cheese, grated
12 oz bacon, fried until crispy, then crumbled
1 bunch green onions, chopped finely
1 cup pecans, chopped
2 cups mayo
1 tsp Lawry's seasoned salt
1 tsp. Lawry's seasoned pepper

combine all ingredients.  Refrigerate until ready to serve.  Serve with crackers.

Spinach Dip

1-10 oz pkg frozen chopped spinach, thawed and drained (squeeze all the water out)
16 oz sour cream
1 medium onion finely chopped
1 can water chestnuts, drained and finely chopped
1 cup mayo
2 env. Lipton vegetable soup mix

Mix all ingredients.  Chill. Serve with crackers or rye bread, cubed.

GREEK YOGURT DIP

TSATZIKI:

2 cups Greek yogurt (whole milk thick yogurt)
1 large cucumber peeled and seeded
2 large cloves pressed garlic
salt and pepper to taste

Grate the cucumber and strain tightly using a (cheeze) cloth until very dry. Mix in all the other ingredients.

This is called A Cup, a cup, a cup Dip

1 cup finely chopped sweet Vidalia Onions
1 cup Mayonnaise
1 cup of your favorite cheese-(Swiss, Monterrey Jack, Cheddar, Mozzarella)
salt to taste and a few dashes of red or green Tabasco sauce
Crackers or Tostadas for dipping

Instructions:

Mix the Sweet Vidalia Onions, the mayonaise and the cheese in a mixing bowl
Spoon the mixture into a greased 1- inch pan or dish
Bake at 350 degrees for 35 to 40 minutes until the surface is brown and bubbly
Serve as a hot dip!

Pumpkin Cheesecake Ball

1 pumpkin pie cheesecake mix
8 oz cream cheese, softened
1 stick butter, softened (no substitutes)

In a large bowl, beat together all ingredients until creamy; cover and chill for 6 hours.  Roll firm mixture into a ball and serve on a platter with graham crackers.

Walking Taco

1 can bean dip
1 small can chopped green chilies
1 bunch green onions, chopped
1 cup sliced black olives
1 cup sour cream
2 medium tomatoes, chopped
2 avocados, mashed with a teaspoon of lemon juice
2 cups finely shredded cheese (Mexican mix or Monterey Jack and Cheddar mix)
Cilantro springs
Tortilla chips

Spread bean dip about half an inch thick in the center of a platter.  Layer the remaining ingredients in the order listed.  Garnish with cilantro springs and serve with tortilla chips.  Best served at room temperature, but you can make it a couple of hours ahead, cover and refrigerate until party time.

This is a good summer dip when fresh tomatoes are plentiful

BLT Dip

1-3 oz package real bacon bits.
1 TBLS Dijon mustard
1/4 cup chopped green onion
6-8 drops Tabasco  sauce
3-4 large tomatoes, peeled and chopped.
1 cup mayonnaise
1/4 cup parsley

Combine all ingredients in a large bowl and chill for at least 1 hour.  Serve with Frito's scoops or chip of your choice.

Strawberry Fruit Dip

1-8oz package cream cheese, softened
1 1/4 cup strawberries, chopped
1/4 cup finely chopped pecans
2 TBLS honey
1/8 tsp ginger

In a small bowl, beat cream cheese until light and fluffy.  Add the remaining ingredients and blend well. Chill several hours to blend flavors.  Serve with fresh fruit.

Chunky Vegetable Dip

1-8 oz container sour cream
1/2 cup finely chopped, seeded cucumber
1/4 cup finely chopped green onions
1/4 cup finely chopped radishes
1-2 TBLS cider or tarragon vinegar
1 1/2 tsp prepared horseradish
3/4 tsp salt

Combine all ingredients and mix well.  Cover and refrigerate until ready to serve.  Remove top and seeds from a large green pepper.  Spoon the dip into the green pepper and center on a plate.  Surround the pepper with fresh vegetables, crackers or bread sticks.
